            Sun of Helios Cocktail

Our twist on the classic Tom Collins uses figs, honey and thyme to create the perfect summer cocktail. It pays tribute to Helios, the God of the Sun, who was famous for pulling the sun across the sky with his golden chariot. According to Homer, wherever Helios drove his chariot, joy, laughter and prosperity shone bright.

Reminiscent of sunsets in Santorini, this cocktail is best enjoyed in the sun with friends.

Ingredients:

25ml lemon juice

15ml honey + lemon thyme syrup

60ml Trogin

Top with soda 

Method:
Build in a highball glass over ice & garnish with a toasted, honey-soaked fig.
